趁他们都离开了,俺赶紧做下特务,看看要蒸全猪的炉是如何构造的?呵呵,原来是一只大锅在下,另一只打穿底部反扣在上,形成一个大蒸锅滴

再用一个特制的木蒸架放上去,然后才是蒸猪的木柜子才开蒸。

板说,旧时的蒸架蒸柜是用竹子做的,更加清香,但竹子保存时间短,不容易清洗,现在改为木头了,呵呵,也不失为美味呀。同样有木的清香,这间蒸猪房共有三个大炉,可以同时蒸三大只猪,足够供应几十桌客人的肉食了
